Muscat de Rivesaltes is the Appellation Controlee for Vin Doux Naturel made from Muscat in the Roussillon. Trouillas is actually the birthplace of fortified wine, discovered by Arnaud de Villanova in the 14th Century.

Our wine is perhaps the driest Muscat de Rivesaltes available and the only one in a green Burgundy bottle!

Viticulture

We practice Sustainable Viticulture, no chemical fertilizers are used. Vines are trained as Cordon Royat.

The grapes are harvested by hand, three weeks after those picked to make our dry muscat , when the grapes are turning to raisins.

2006 had a wet winter with the first snow for 20 years. After April there was no more rain, resulting in a hot, dry ripening period with very low disease risk. The combination of plentiful soil-water supplies and good weather led to wines with intense fruit and good acid balance.

Vinification

Blend: 100% Muscat à Petits Grains

Alcohol content 16%, Residual Sugar 103g, pH 3.5

De-stemmed without crushing, gently pressed and settled. Fermented at 16°C for 4 days and then fortified with 10% pure ethanol at a specific moment and chilled to 9°C to prevent further fermentation, therefore retaining the natural sweetness of the grapes.

Fined only with bentonite. Sterile-filtered before bottling in environmentally-friendly bottles and sealed with natural cork treated with microwave to reduce the risk of TCA.

It can also be served with dessert, or as a liquid dessert itself.
