Viticulture
Hand harvested from Muscat d'Alexandrie grown on sandy clay on the lower
slopes of the hill of Le Roubau.

Winemaking
After de-stemming and cold settling overnight, the juice is slowly fermented under
refrigeration in stainless steel tanks.
No malolactic fermentation takes place, retaining the crispness of the
natural grape acidity.
The finished wine is racked off its lees, gently fined and cold stabilized. It receives a single filtration before bottling.
