One Block White
One Block is named in memory of living one
block from the World Trade Center on Sept 11th and the fact that these
wines are made from a single block of vines.
Light, fresh and aromatic, with an array of aromas - spring flowers and
citrus fruits.
It tantalizes the tongue with crisp fruit and a stony minerality. It is a long
and complex wine, very drinkable either on its own or with food.

Viticulture
Hand harvested from Muscat Petit Grains grown on stony clay on the lower
slopes of the hill of Le Roubau.
This Muscat is the first wine of the harvest. We wait until the
balance of fruit flavour and acidity in the grapes is perfect and then only pick
bunches which are free of disease and insect damage.
Winemaking
After de-stemming and cold settling overnight, the must is fermented under
refrigeration in stainless steel tanks. At the end of fermentation the wine is stirred
on its lees twice a week to for 6 weeks to give the wine a creamier texture and to fine it naturally thus avoiding the need
for chemical additions.
The finished wine is then racked off its lees and allowed to cold stabilize
naturally over winter. It receives a single filtration before bottling. This natural settling retains more of the beautiful
aromatic qualities of the wine. Because it has not been cold-stabilised,
small harmless crystals may appear.
